Vegetable Medallions

Medallions of potato, broccoli and cheese


I was inspired to make some Vegetable Medallions after having tried some at Ikea yesterday, where they served it with stuffed salmon. At first, it looked a little dodgy, but after the first bite, I just couldn't stop eating those medallions that tasted so light and buttery, with bits of potato and broccoli in them.

So I decided to make a batch of them for lunch today, crossing my fingers that they will turn out. I used cheddar cheese in the mix, which is fine, although I think the ones at Ikea had a slightly milder taste to it. Anyway, here is my version of these wonderful golden vegetable medallions. They are easy to make, so get the kids to help out with this one!

Vegetable Medallions

Ingredients

3 medium potatoes, peeled and finely diced into 5mm cubes (yields 2 cups)
3 tbsp butter
1/2 cup chopped brown onions
3 tbsp chopped green onions/scallions
1 cup broccoli florets, roughly chopped
1 tsp chopped thyme/parsley
1/8 tsp onion powder (optional)
1/8 tsp garlic powder (optional)
1/2 tsp salt
Black pepper, to taste
1/2 cup grated cheese (Swiss or Tasty/Cheddar), plus extra for sprinkling
1/2 cup cream
2 eggs, lightly beaten
Extra butter for greasing

Method

Preheat oven to 180°C. Grease 12 x 1/3 cup (80ml) muffin pans with butter.

Heat up the butter in a large pan and add the brown onions, green onions, potatoes and broccoli. Sautee for 3-4 minutes on medium heat. Add thyme/parsley, onion and garlic powder, salt and pepper. Mix well and fry for 1 minute. Transfer the mixture to a bowl and add cheese, cream and eggs. Mix well.

Spoon the mixture into the muffin pan and level the top. Sprinkle with extra grated cheese if desired. Bake in oven for 30 minutes until golden brown. Remove and cool completely in the tin. Use a thin bladed plastic knife and gently remove the "medallions" from the pan. Serve as a side dish or just as a snack on its own. Enjoy!

Tip: Refrigerate any leftovers for a few hours until firm. Then, take them out and pan-fry them in a little oil on both sides until browned and crisp.

    I'm just curious about the brown onions you mention. I've never seen brown onions before, nor do I know where I could get some. Would it be ok to use yellow onions or red onions instead?

  2. Hi, You can use yellow onions too. We call them brown onions here, I think they're similar.

  3. Even with greasing mine stuck to the tin. I've got a new gas oven and haven't figured it out yet. I think it's also because I forgot to buy the cream and had to use milk. Plus I think my potatoes could have been better minced [lazy], but I'm definitely going to try again because the flavour was there. Thanks for sharing the recipe.

  4. @Alison: Hi! Thanks for your feedback. Yes, they do tend to stick to the tin a bit, but seems to firm up a bit more after they cool down a little and makes it a little easier to remove from the tin. Did you use large eggs to make these, or maybe add a bit more egg so it sets better. I also used thickened/heavy cream for this.

  5. I had the vegetable medallions at Ikea today and would have sworn it was broccoli and cauliflower, not potatoes, bound together with perhaps egg & cheese.

  6. I had them at IKEA a few weeks ago, and I think you're right. Tastes like cauliflower in there. Will have to make these again, with cauliflower! :)

    We had this food for lunch today and it was perfect. I don`t know (and care) if in Ikea it is with cauliflower of with potatoes, it is just perfect as you wrote it. (And very easy to follow)
    I am sure, that it will be often on our menu.

    "A ready-made, potato-based dish with broccoli, leek, onions and cheese. Serve as a side dish with chicken, meat or fish, or as they are as a vegetarian dish."

  10. You can buy them in the shop part on your way out of Ikea. They're in the fridge section. Eight to a box. The ingredients on the back are: Potatoes, cream, broccoli, leek, onion, cheese, chervil, parsley, chive, pepper. And they are delicious.

    Yes, I found them in Ikea last year. They never had it before though. I've got a box in my freezer now :)

  12. I used frozen chopped broccoli and frozen hash brown potatoes and they worked out quite well with a lot less work.
